The only problem is financing it as a small grower. I do not know what custom crush situations are at sparkling houses. It would be an amazing fit-- complete ripeness at 22.4 brix-- just perfect for sparkling. The finished wine this year will be 12.9% or so. I think it is a brilliant idea!
