The End is Near
Rain clouds loom outside the little winery as I write this. Though we have had a few sprinkles throughout harvest it actually looks like this one will leave us some real moisture.
The days are shorter, the nights are colder. Vine canopies are commencing their rainbow descent into senescence.
These are all warnings that the long north coast growing season is coming to a close. Here at the little facility where Bedrock’s first wines are being shepherded to the relative safety of barrel we had a frenetic weekend of bringing in fruit. Friday brought in Kick Ranch and Old Lakeville vineyards. Saturday the Marchus family, friends, and myself picked Abbastanza “the little vineyard that could” vineyard.
Everything looks great, albeit possessing some of the challenges of late-season fruit. For instance, Old Lakeville soaked up to 28 brix and a pH of 3.83 before the water add (which only raises the pH further). I am waiting for TA numbers now, but my guess is that they are low. Kick Ranch had similar numbers though surprisingly was a little less sweet, soaking up to 27.5. This means that the typical new-world Syrah techniques will have to be employed– a water add to reduce the sugar, and the addition of TA for color and stability. Ideally, I will get the wines to about 3.5 pH pre-malolactic conversion and to about 25 brix to ensure a smooth fermentation for the wild yeasts and to prevent the wine from being scaldingly high in alcohol (28 brix converts to about 16% alcohol if ferment is complete).
Little Abbastanza soaked up to 25.1 brix and is gaining good color in the fermenter. Amazing that the Zin and Petite Sirah here, only 1/2 mile from my vineyard, ripened a month later. That said, Ridge’s Pagani Ranch is only partially picked right now, and Ravenswood’s Barricia Vineyard was picked on Wednesday, and they are close by. Chalk the difference up to site and year.
After pitch-forking 12 macro-bins into the destemmer on Friday, and then picking Abbastanza on Saturday I was pretty damn sore on Sunday! A day of rest indeed….
